As part of Carver’s ECO Schools Sustainable Foods pathway, the severe and profound classroom (room L) initiated a new diet to the seven students enrolled in Ms. Carreras’ classroom. Sugars and processed food were eliminated during all school time meals. Two of the students’ diets also included the elimination of gluten and dairy. The diet change began during the month of November, coinciding with the school-wide ECO Schools project, and continues to date. Data was initiated and maintained on each student to show the physical, behavioral, and academic changes that the diet might have on these students. The results are reflected above. It should be noted that the teacher and staff of this classroom have reported no adverse effects due to this diet change.
